Prep Time: 15 minutes | Cook Time: 0 minutes | Serves: 4-6
Not quite a guacamole but with all of the flavors and creaminess that you love. Blend this up in less than 5 minutes in
your blender for the most delicious, thick and tart dressing, loaded with fresh cilantro. Dollop this on your favorite vegetable burger- (I’m enjoying it with the Broccoli Fritters recipe from my book “Cultivating Joy in the Kitchen“). Serve it on top of chili or as salad dressing for your favorite bean and tomato based warm weather salad.
Ingredients
- 1 clove garlic crushed
- 1/2 small jalapeno pepper, chopped
- 1/4 cup water
- 1/4 cup lime juice, fresh
- 1/4 cup olive oil or avocado oil
- 1/2 avocado, fresh, peeled, seed removed
- 1/2 teaspoon natural salt
- handful- fresh cilantro leaves, washed
- Method
- Place garlic and jalapeno in blender. Add water, lime juice, olive oil and blend .
- Add avocado, salt and fresh cilantro and blend until cilantro is coarsely chopped.
- Taste and adjust seasonings and consistency as needed. Add a tablespoon or two of water if it’s too thick.
- Store in clean jar in refrigerator until needed.
- This will keep in the refrigerator for several days- but it proboboly won’t last that long!
Variations:
Substitute lime juice for fresh lemon juice.
How do you think this will taste without the jalapenos? I can’t do spicy but everything else about this sounds amazing!
The jalapeno can be eliminated if you can’t do spicy. You can add in some cumin powder and a little ground chili powder for added flavor.
