Sweet potatoes are a popular fall ingredient and rightly so. Locally the farms and markets have many varieties with different flavors and textures to choose from.
I choose a white variety of sweet potato for this recipe but feel free to swap it out for another variety of sweet potato or a yam. Scrub them up and leave the skin on, as they are an excellent source of vitamins A, C, E, and beta-carotene. Confused as to what the heck is the difference between sweet potato vs. yams.

Smashed chipotle maple sweet potato
a sweet and spicy side dish perfect for your holiday table or a weeknight meal
Ingredients
- 2 pounds sweet potato, white trimmed and scrubbed clean
- 2 Tablespoons plant-based butter or coconut oil
- 1 Tablespoon maple syrup
- 1/2 teaspoon salt
- to taste fresh ground pepper
- 1 teaspoon garlic powder
- 1 teaspoon chipotle powder
- dash cayenne pepper
- 2 tablespoons scallions and fresh parsley, minced
Optional toppings
- feta cheese or vegan feta, crumbled
Instructions

Preheat oven to 425 degrees

Line sheet pan with parchment paper, set aside

Trim ends off of sweet potatos and scrub with vegetable brush. Slice into 1" thick rounds and place in medium sized mixing bowl.

In a small saucepan melt plant based butter, add maple syrup, salt, pepper, garlic powder, chipotle powder and cayenne, stir to combine

Pour butter mixture over sweet potato and stir to combine and coat each piece

Place sweet potato slice on parchment lined sheet pan, leaving a little space in between each slice.

Bake in 425 oven for 25-30 minutes until soft and lightly browned on top.
Remove pan from oven and gently smash each round with fork or potato masher.

Turn on broiler to high, place smashed sweet potato back in oven and broil for 3-6 minutes until crispy and browned on top.
Remove from oven and sprinkle with chopped scallions and parsley. add additional toppings if desired or an extra drizzle of olive oil

Serve hot from oven. Leftovers can be re-crisped under broiler before serving.
