If spicy is your go -to you’ll love this easy to make smashed chickpea salad. Use canned chickpeas or soak dried chickpeas and cook. This is perfect for an easy open face sandwich, on top of a bed of salad greens or with tortilla chips to dip into.
Smashed spicy chickpea salad
Servings 4 servings
Ingredients
- 15 oz chickpeas, cooked, drained and rinsed
- 1/4 cup mayonaise- ( I used avocado mayonaise)
- 2-3 Tablespoons hot sauce depending on how spicy you like it
- 1 stalk celery, minced
- 1/4 cup kimchi, chopped into small pieces
- 1 Tablespoon chives or scallions, minced
- pinch salt as needed
- 1 or 2 Tablespoons lime juice
Instructions

Place cooked & drained chickpeas in a mixing bowl, mash with potato masher. ( leave them a little chunky so they still have some texture)

In a small bowl whisk together mayonaise and hot sauce until combined.

Add seasoned mayonaise, celery, kimchi, chives and lime juice to bowl with chickpeas, stir to combine. taste and add additional salt as needed.
