Roasted Pears with raspberry sauce
Have you ever roasted fruit? Roasting intensifies fruits natural sweetness. Pears are delicious tossed with warming spices and roasted. They just melt in your mouth. I used Bartlett pears but other varieties work well too. Pair this with a simple fruity raspberry sauce (made from raspberry jam) and shaved white chocolate.
Ingredients
- 3 each bartlet pears, firm
- 1 tbsp coconut oil , melted
- 1/4 tsp nutmeg, ground
- 1/4 tsp cardamom, ground
- 1 tsp cinnamon, ground
- 1 tbsp coconut sugar or sweetener of choice
- 1 tbsp brandy, optional
Raspberry sauce
- 1 cup raspberry jam, all fruit, no added sugar
- 1 tbsp lemon juice, fresh
- 1/4 cup water
Garnishes
- 1 tbsp vegan white chocolate, ( I used Pascha brand)
- 1/2 pint fresh berries; raspberries, blackberries
Instructions

Preheat oven to 425 degrees

Wash pears, slice in 1/2 lengthwise, slice 1/2's in 1/2 lengthwise to make wedges, slice out core. Place pear wedges in medium sized bowl. Pour melted coconut oil over pears toss gently to combine.

Combine nutmeg, cardamom, cinnamon and sugar in small bowl. Sprinkle spice mixture over pears and toss to combine and coat pears.

Place pears in heat proof pan, bake in oven for 30 minutes until roasted, softened and golden. Drizzle brandy over top of pears, if using during last 5 minutes of cooking.
Raspberry sauce

While pears are roasting, melt raspberry jam in small sauce pan, add lemon and water, stir to combine.

Place raspberry mixture in a small blender and blend until pureed and smooth. Adjust seasonings and consistency if needed. Chill until ready to use.
To serve

Drizzle raspberry sauce on bottom of individual serving plate. Place 3 pear wedges on top. Garnish with fresh berries and shaved white chocolate. (If pears are still warm the chocolate will melt slightly...yum!)
