is so refreshing. Chinese cabbage also commonly known as napa cabbage is rich in vitamin C. It’s mild flavor and thin, tender and crispy leaves work great for raw salads. This comes together quickly but won’t last long it’s that good.
Mango Cabbage Slaw

Ingredients
- 1 small head chinese cabbage cut in 1/2 lengthwise and sliced very thin
- 2 stalks Celery sliced very thin on the diagonal
- 1 each cucumber peeled, if the skins are bitter, sliced in 1/2 lengthwise and cut into thin 1/2 moon shapes
- 2 Tablespoons lime juice, fresh
- 3 Tablespoons olive oil
- 1 teaspoon natural salt
- 2 teaspoons cumin powder
- 1 teaspoon chili powder
- 1 each mango, ripe peeled and cut into thin slices
- 1 handful cilantro, fresh chopped
Instructions

Place all of the ingredients into a medium sized bowl. Toss to combine. Taste and adjust seasonings as needed. Serve chilled or at room temperature
