Summertime meals are SALAD meals. Think quick, cool, lots of local and organic raw fruits, berries, vegetables, plentiful dark leafy greens and a flavorful drizzle of dressing to pull it all together. Summer time main dish salads was the focus of this past weekends cooking class. Regular classes are now being held at Meadow View Farmhouse Kitchen, in New Paltz, New York. We combined farm fresh produce, picked that morning, whisked up some good fat dressings and chopped our way to a variety of delicious meals.
