This Rich, creamy and a little bit spicy (you decide how much) soup is always a favorite when I prepare it for my clients. All of the warming spices add a great pop of flavor

to this wintery soup. If you are lucky enough to resource yams or sweet potato from your local farmer all the better.   Serve it family-style and put out an assortment of toppings so you can customize your bowl.  Try toasted coconut flakes, chopped chives or scallions, cilantro leaves, croutons or torn toasted tortilla strips, coconut chipotle cream, sauteed spinach or cooked wild rice or just serve as is.  Soup can instantly become a nourishing and satisfying meal that will warm you right up.

Curried Sweet Potato Soup

Servings 6 servings

Ingredients

  • 2 each leeks, white part, thinnly sliced wash well to remove dirt
  • 1/4 cup coconut oil
  • 1 each onion, chopped
  • 2 each celery stalks, chopped
  • 2 teaspooon garlic, fresh, chopped
  • 1-2 tablespoons curry powder, yellow
  • 1 tablespoon ginger, fresh, grated
  • 1 15 oz coconut milk
  • 4 cups vegetable or chicken stock
  • 2 pounds sweet potato or garnet yams peeled and chopped , small dice
  • 2-3 each parsnips peeled and chopped
  • fresh ground pepper and salt to taste

Garnishes

  • 1/2 cup coconut flakes, toasted
  • 1/4 cup chopped chives or cilantro

Instructions

  1. Heat medium/large sized soup pot over medium heat. Add coconut oil, leeks, onions, celery and garlic, sauted for 5-8 minutes until vegetables are softened

    Add curry powder and ginger, saute for a few more minutes , stirring to incorporate into the vegetables and brown slightly, being careful not to burn the spices

  2. Add coconut milk, stock, sweet potato and parsnips, stir. Bring soup to a boil, turn down heat to a simmer, cover and cook for 30-40 minutes until vegetables are soft and cooked through.

  3. Puree soup in batches until smooth and creamy in a blender or use an immersion style blender to puree the soup.

    Taste and adjust seasonings as needed adding salt and pepper. (this step will vary depending on what type of stock you used).

    Serve soup hot as is or with additional toppings.

    This soup freezes well too!
