These yummy little treats are easy to make, the perfect little sweet treat with a surprise inside. Bliss bites travel well and are a nice dessert option as is or with additional fruit and berries.
- 1 cup- Cashews, raw, soaked in water for (2-4 hours and drained)
- 1-1/2 cups- Shredded coconut, dry, unsweetened
- 2 Tablespoons- Almond butter, smooth
- Zest of 1/2 lemon
- Zest of 1/2 lime or orange
- 1 teaspoon- lemon extract
- 1/2 teaspoon- Vanilla extract
- 2 Tablespoons- raw honey or substitute for sweetener of your choice
- Fresh Blueberries or raspberries
- Extra shredded coconut to roll bliss bites inMethod
- Drain soaked cashews and place in bowl of food processor fitter with an S blade.
- Add shredded coconut, almond butter, lemon, lime zest, lemon extract, vanilla extract and honey.
- Process ingredients until the mixture is combined , but it still has a nice texture.
- Remove mixture from bowl of food processor and shape mixture into small balls, make a small indent in each ball and press blueberry into middle. Pinch dough around blueberry to cover and roll back into shape.
- Roll each bite into shredded coconut. Place bliss bites on clean plate , cover and refrigerate for several hours until firm.
- Server bliss bites as is or on a platter with additional fruit and berries.
