When zucchini and summer squash are abundant, try this simple and refreshing salad using a spiralizer to make thin, slices for a fun and easy to prepare meal.
- 2 each Zucchini or yellow squash, or a combination, sliced with spiralizer into ribbons, or into very thin slices
- 1/4 cup Red onion, thin slices
- 1 each Red, orange or green pepper, cut into julienne slices
- 1/2 cup Pitted Kalamata olives or nicoise style olives- chopped
- 8 oz Fresh mozzarella, cherry size balls
- 2 Tablespoons Extra Virgin Olive oil
- 2 Tablespoons Red wine or balsamic vinegar
- Handful Fresh Basil and Parsley leaves, chopped
- Salt and Pepper to taste
- Add all of the ingredients into a large mixing bowl, toss to combine.
- Taste and adjust seasonings as needed.
- Chill and serve, perfect as a light first course
Chefs tips
- Omit fresh mozzarella
- Add, 15 oz. artichoke hearts, drained and chopped
- Add in 1/2 cup of mushrooms, sliced
- Add in your choice of favorite cured meats, pepperoni or spicy cured italian sausage, chopped into small pieces.
