These noodles are yummy as is or you can add other vegetables such as sprouts, red pepper strips, leftover pieces of cooked salmon or beef cut into small strips.

Vegetarian, Gluten Free, Sugar Free and Dairy Free

Ingredients

  • 1- 8 oz package soba noodles, cooked
  • 2-3 carrots peeled and julienned
  • 1-1/2 Tbsp tamari
  • ½ cup olive oil
  • 1 tsp. toasted sesame oil
  • 3 Tbsp brown rice vinegar
  • 2 Tbsp maple syrup
  • 1 Tbsp Dijon mustard
  • 4-5 small heads bok choy washed and sliced in ½

Method

  1. Cook soba noodles according to package directions, drain and rinse with cold water.
  2. Place noodles and julienned carrots in a large bowl.
  3. In a small bowl or in the blender, mix together tamari, oils, rice vinegar, maple syrup and mustard.
  4. Drizzle ½ of the dressing over sliced bok Choy and marinate for @ 20 minutes. Place bok Choy on hot grill or in heated cast iron pan and cook on each side for 2-3 minutes until softened and caramelized.
  5. Cut bok Choy on diagonal into pieces and toss with noodles and remaining dressing.

To Serve

I like to served these noodles on grilled green garlic in the early summer.
